Strangozzi with Sant'Agata Feltria Summer Truffle
Strangozzi are a unique pasta format. Typical of Central Italy, similar to spaghetti alla chitarra but with a rectangular cross-section, they are made with only water and durum wheat semolina flour. In this version, the dough is enriched with Summer Black Truffle and porcini mushrooms from our mountains. The colour of the pasta is dark thanks to the presence of the prized truffle, and the texture is porous and rough, suitable for holding any type of sauce. The product is dried naturally at a controlled temperature, which ensures the preservation of all the qualitative and organoleptic characteristics of the pasta and truffle, thus preserving all its aromas and scents.
The Sant'Agata Feltria (Rimini) truffle is an absolute certainty. Recognised over the centuries for the collection of its delicious truffles, it could not be missing among the excellences of our territory. In addition to Sant'Agata, the territories of Montefeltro, the Savio Valley and the Bidente Valley, thanks to their climatic characteristics, fully represent the natural habitat for the growth of one of Italy's best truffles. In addition to the White Precious truffle (the most famous and renowned), one can also find the Black Summer truffle, the Black hooked truffle and the Bianchetto truffle. It was only after the Second World War that a start was made on exploiting these treasures from the subsoil, and an artisanal harvesting and processing chain became increasingly present. As the decades went by, this truffle became more and more famous, which is why the festival was organised to bring together experts, the curious and restaurateurs. Over the years, it has become a major national fair for the prized white truffle and Sant'Agata Feltria boasts the "Truffle City" label.
These strangozzi are perfect on their own, given their rich and persistent flavour. You can season them with a knob of butter, or with good extra virgin olive oil from our region. They are also perfect with a mushroom sauce or a parmesan and cream sauce. You can further enhance them with a generous grating of black summer truffle or white truffle. A unique and unexpected dish that will leave your family and guests literally speechless.
