Only referred to as "porcino", it has the scientific name Boletus Edulis. Its cap is fleshy, hemispherical and convex, sometimes poorly developed compared to the stem. The stem is full, massive, ventricous, whitish or light-hazel, decorated almost totally by a thick paler lattice. Due to its consistency and fleshness it is suitable to be stored in olive oil.
The porcino is one of the most valuable and sought-after mushrooms, its harvest depending on the season, takes place from late May to late June and then from late August throughout the autumn period.
The production of mushrooms is completely handmade, carried out by hand in a small laboratory in Borgotaro, home of the mushroom. Porcini Mushroom is dried naturally without being treated. Then it is carefully selected, choosing the most beautiful thin-cut slices and light color.

To best prepare the dried porcini mushrooms, it is necessary to soak the product for about an hour, remembering to change the water at least a couple of times. Once found, they can be used in multiple ways. The best and most typical dishes for a mushroom of such calibre are: Carnaroli or Arborio quality risotto, homemade rough noodles, polenta taragna or classic, preparation of sauces, and seasonings, also for savory pies, sautéed mushrooms and side dishes.
