Sangiovese Reserve "Vigna Probi"
Produced on the hills of Modigliana at 500 meters above sea level and grown organically, Villa Papiano's Sangiovese di Romagna "Papesse" is composed of 95% Sangiovese, with a touch of Negretto and Balsamina. Fermentation occurs spontaneously with native yeasts, followed by six months of aging in cement and another six in the bottle.
Bright ruby red, "Papesse" releases aromas of morello cherry, cherry and plum, with hints of Mediterranean herbs, violet and undergrowth. On the palate it is lively and juicy, with a young and dynamic tannicity. With an alcohol content of 13%, it pairs well with cured meats, aged cheeses, grilled meat and stews for a balanced and quality gastronomic experience.
500 meters above Modigliana, sandstone soils, enriched by layers of clay. Cultivation is carried out according to organic methods.
