A strong and structured wine for lovers of Cabernet and Sauvignon vines. A wine not for every day, but for important occasions and meals, it has a full red color and releases pronounced aromas of morello cherries and ripe fruit. To be paired with fine red meats and quality cured meats and cheeses.
We are in Montemaggio, in the municipality of Bertinoro in the province of Forlì-Cesena, in the heart of Romagna. Only fourteen hectares in total, which extend between woods and olive trees resting on gentle hillsides.
Cabernet Sauvignon 60%, Merlot 40%
It starts with a soft pressing and destemming. The fermentation takes place separately of the two grape varieties in steel without temperature control, with a maceration of 15 days for the Cabernet and 20 days for the Merlot. The blending of the wines takes place after malolactic fermentation and maturation on their fine lees for approximately 10 months, exclusively in steel, with continuous batonnages.
Ageing: two years in the bottle
Characteristics
Intense ruby red in colour, the perfume exudes hints of carob, purple fruit such as ripe plum and balsamic and toasted final notes. The taste is balanced and structured, with a long and persistent finish and the tannin does not prevail.
Pairings
It pairs well with and enhances the flavors of red and fine meats, cured meats and mature cheeses and roasted game.
