Cabernet Colli di Rimini PDO - "Stacciarino"

Pure Cabernet Sauvignon, aged in barriques for six months. The long fermentation on the skins creates the body necessary to give longevity over the years to this product.

This wine takes its name from Via Stacciarino, the main road that leads to our farm.

Cabernet sauvignon 100%

Fermentation with whole grain maceration at a controlled temperature of 26 ºC, concentrated by "bleeding". The maceration is prolonged until the end of the alcoholic fermentation. Aging in oak barrels for at least 12 months for 70% of the mass, continuing in steel until bottling.

Characteristics

Intense burgundy red color, with garnet reflections. Powerful entrance typical and evolved, in which we find the descriptors (black pepper, pepper) lowered into a harmonious complexity, with toasted notes, hints of cocoa, coffee, and a balsamic finish with notes of mint and eucalyptus. In the mouth it is intense, enveloping, despite the great structure to which it combines wise balance and persistence.

Pairings

Suitable for demanding and refined dishes, such as roast, boiled, grilled or raw meats. Excellent with strong and aged cheeses, tasty and seasoned meats such as Parma ham. Also perfect with game.
