The Luna Lab pasta factory was born from the experience of a family of Emilian restaurateurs since 1972. The first restaurant quickly became famous for its authentic cuisine, fresh pasta, and family atmosphere.

Luna Lab's products use only genuine local ingredients, such as free-range eggs, Parmigiano Reggiano DOP, and fresh ricotta from the dairy, all without preservatives or flavor enhancers. The recipes are traditional, handed down from generation to generation and carefully crafted by the expert hands of the rezdore (the cooks who guard the fresh pasta).

Characteristics

Green Tortelli with Ricotta and Spinach feature a deep yellow pastry that reveals the green hues of the filling. The texture of the pasta is thin yet elastic, perfectly enclosing the creamy filling. The overall flavor is harmonious: the sweetness of the ricotta melds with the freshness of the spinach, enhanced by the savory touch of Parmigiano Reggiano DOP and the spicy note of nutmeg.

Pairings

Ricotta and Spinach Tortelli Verdi are excellent simply topped with melted butter and sage, which enhances their delicate flavor, or with a drizzle of extra virgin olive oil and Parmigiano Reggiano DOP. For a bolder flavor, they can be paired with walnut sauce or a light white ragù.
On the wine front, they pair well with a fresh and fragrant white like Trebbiano or Pignoletto, or with a light and harmonious red like Lambrusco, capable of balancing the softness of the ricotta and the freshness of the spinach.

Refrigerate the tortelli immediately upon receipt and consume them by the indicated date. Each product will last at least 20 days from receipt if stored in the refrigerator.
You can freeze them before the expiration date and keep them in the freezer for up to 3 months.
