The Luna Lab pasta factory was born from the experience of a family of Emilian restaurateurs since 1972. The first restaurant quickly became famous for its authentic cuisine, fresh pasta, and family atmosphere.
The passion for authentic flavors has been passed down from generation to generation to their children, where it lives on both in the restaurant and in the artisanal fresh pasta workshop.

Luna Lab's products use only genuine local ingredients, such as free-range eggs, Parmigiano Reggiano DOP, and fresh ricotta from the dairy, all without preservatives or flavor enhancers. The recipes are traditional, handed down from generation to generation and carefully crafted by the expert hands of the rezdore (the cooks who guard the fresh pasta).

Characteristics

Tortellini have a characteristic ring shape, small and regular, made from a thin sheet of fresh egg pasta. They have a uniform yellow color, typical of egg pasta, while the filling is darker and more compact. The texture of the pasta is firm yet elastic, retaining its shape during cooking. The overall flavor is balanced and intense, with the bold flavor of Parmigiano Reggiano DOP blending with the savory notes of the meat and mortadella, enhanced by a subtle hint of nutmeg.

Pairings

Tortellini are at their best served in capon or beef broth, a signature dish of Emilian festivals. They're also excellent simply topped with melted butter and Parmigiano Reggiano DOP, or in richer variations like cream and prosciutto. For wine pairing, we recommend a full-bodied, crisp white wine like Pignoletto Frizzante DOP, or a lively, fragrant red wine like Lambrusco di Sorbara DOP, which perfectly balance the rich filling.

Ingredients: soft WHEAT flour, EGGS, 24-month Parmigiano Reggiano DOP (MILK, salt, rennet), pork
and turkey, mortadella (pork, pork tripe, pork fat, salt, pepper, natural flavours), sunflower seed oil
sunflower, nutmeg, salt.
May contain traces of SOY and MUSTARD

Refrigerate the tortellini immediately upon receipt and consume them by the indicated date. Each product will last at least 20 days if stored refrigerated.
You can freeze them before the expiration date and keep them in the freezer for up to 3 months.
