The Luna Lab pasta factory was born from the experience of a family of Emilian restaurateurs since 1972. The first restaurant quickly became famous for its authentic cuisine, fresh pasta, and family atmosphere.
The passion for authentic flavors has been passed down from generation to generation to their children, where it lives on both in the restaurant and in the artisanal fresh pasta workshop.

Luna Lab's products use only genuine local ingredients, such as free-range eggs, Parmigiano Reggiano DOP, and fresh ricotta from the dairy, all without preservatives or flavor enhancers. The recipes are traditional, handed down from generation to generation and carefully crafted by the expert hands of the rezdore (the cooks who guard the fresh pasta).

Characteristics

Rosettes are filled rolls of fresh egg pasta arranged in a baking dish, appearing inviting and golden brown once baked. The texture is soft and creamy inside, thanks to the blend of béchamel, cream, and Emmental cheese, while Parmigiano Reggiano DOP adds a savory and lingering note. The overall flavor is balanced: the delicate texture of the cooked ham melds with the richness of the cheeses and the lightness of the fresh pasta, creating a delicious and satisfying combination.

Pairings

Rosettes are perfect as a first course for holidays or a special dinner. They're best enjoyed with a crisp, savory white wine like Pignoletto or a light, lively red like Lambrusco. They're also excellent with a glass of smooth Chardonnay, which enhances their creaminess.

Fresh stuffed egg pasta. Ingredients: WHEAT flour, EGGS, béchamel sauce (MILK, WHEAT flour, salt), cooked ham (pork leg, salt, sucrose), Emmental cheese (pasteurized MILK, salt), fresh CREAM, 24-month-aged Parmigiano Reggiano DOP (MILK, salt, rennet). May contain traces of SOY and MUSTARD.
No additives or preservatives

Refrigerate the rosettes immediately upon receipt and consume them by the indicated date. Each product will last at least 20 days from arrival if stored in the refrigerator.
You can freeze them before the expiration date and keep them in the freezer for up to 3 months.
