Classic Method Brut Millesimato Spergola PDO - "Vigna al vento"
A wine that represents the Spergola of Scandiano and Canossa in a superlative way thanks to the long processing of this classic method. The grapes are harvested by hand with a slightly early harvest, maintaining the acidity component in the fruit useful for a good freshness of the base wine to make sparkling wine. A fresh and intense bouquet, with a broad fruity note of green apple, white flowers and a delicate yeast fragrance typical of the classic method.
Jano di Scandiano in the province of Reggio Emilia at an altitude of 150 m. above sea level The nature of the soil is composed of sandstone, marl, chalk and clay. The training system is GDC (Geneva Double Curtain) and the age of the vineyard is 50 years.
100% Spergola
Bottle fermentation for over 30 months at a constant temperature of 14°, riddling and final disgorgement. The harvest takes place at the end of August and the grape yield per hectare is 60 quintals.
Characteristics
Sparkling wine with a beautiful deep straw yellow, with golden reflections and an elegant, minute, fine and continuous "perlage". On the nose it presents a fresh and intense bouquet, with a broad fruity note of green apple, white flowers and a delicate yeasty fragrance, given by over four years of bottle refinement. On the palate it is harmonious and balanced, with a light aftertaste of ripe fruit, apple and almond. The prolonged stay on the yeasts favors the fineness of the "perlage" and gives the wine greater complexity, releasing pleasant delicate notes of "bread crust" and pastry well balanced by excellent freshness. Overall it is well structured and persistent in the mouth thanks also to a good flavor.
Pairings
Excellent as an aperitif, but also throughout the meal with fish dishes such as shellfish, seafood, tasty stews or fried foods. Particularly suitable with traditional products such as Parmigiano Reggiano, pumpkin tortelli and cured meats
