Rubicone Bianco PGI - "Bizzarro"
Born from a bizarre idea, from the combination of Pignoletto, Biancame and Trebbiano grapes, this sparkling, fresh, intense and fruity wine is suitable to be tasted daily and combined with aperitifs, appetizers and fish dishes.
In Coriano, in the province of Rimini, a characteristic place for the Rubicone Bianco PGI.
Pignoletto 60%, Bombino white 40%
Vinification with soft pressing and slow cold fermentation (12 μc) in hyper-reduction. Aging with rest on the fine lees for 2 months, and then refermented with Charmat method to 14-16 °C.
Characteristics
Straw yellow color with greenish reflections, with a fine and persistent perlage. The nose has a fine and fragrant entrance with notes of hawthorn, green apple and a slight grassy nuance; while in the opening notes of cedar and sage. In the mouth it is good to drink, fairly fragrant, with a slightly acidic finish, therefore with a taste consistent with the olfactory profile.
Pairings
Wonderful with all the fish courses, such as sea bream and baked snapper, but also crustaceans and shellfish. Excellent with white meats, even if spicy and fragrant. To be combined with fresh and semi-mature cheeses. Try it also at the beginning of dinner, for a gourmet aperitif.
