Lavender honey from the hills of wild and unspoilt Sardinia: a product more unique than rare. Lavender honey is not widespread due to production difficulties and high costs. It is highly recognised and appreciated for its unique qualities and characteristics, which differentiate it from any other honey. Indeed, it acts as a calming agent by inhibiting the nervous system, controlling anxiety, stress and insomnia. Moreover, containing many antioxidants, it is able to alleviate symptoms of respiratory diseases, such as coughs and colds.
Apicoltura Manfredini was established back in 1922 thanks to Pio Manfredini, a true pioneer in artisanal honey production and processing techniques. The family history continues from generation to generation, handing down secrets and passions; refining more and more totally artisanal processing techniques. Respect for bees and the land are the fundamental cornerstone of their production. The honey is processed using traditional techniques that respect the physical, chemical and organoleptic characteristics of the product as much as possible. Such a reality certainly could not be missing among the most prized products of Emilia-Romagna.
Characteristics
Lavender honey is bright straw yellow in colour with whitish hues when crystallised. The scent is unmistakable due to its aromaticity, flowery with hints of incense and chamomile. The flavour is sweet, fruity and spicy, always remaining delicate.

Pairings
We recommend tasting Lavender Honey on its own to bring out all its aromas and flavours. However, it is perfect with important cheeses, able to hold their own against this nectar, such as Parmigiano Reggiano PDO Vacche Rosse aged from 40 months upwards. Excellent in combination with fresh fruit or at the end of a meal to end on a high note.
