Certified and Organic Raspberry Extra Jam. It comes directly from the Modena Apennines between the high mountain territories of Sestola and Fanano, where raspberries are harvested and processed by hand by adding only a small amount of cane sugar. The quantity of fruit is consistent: 140 g per 100 g of product. A small artisanal production for an unparalleled excellence.
For the products based on Wild Blueberry typical of the Modena Apennines and other Berries such as raspberries, we have selected a symbol of our territory, namely the Azienda Agricola i Rodi. A family-run business located in Fanano sull'Appennino in the province of Modena. In this place everything happens: the cultivation, harvesting and processing of the local fruits, among green meadows and chestnut woods. As it is obvious that it is for a reality of this type, all the cultivation of fruits is organic and the production cycle is almost zero impact on the environment. Blueberry is wild, therefore it is harvested only in the woods and is not cultivated, while blackberries, red currants, black currants, strawberries and raspberries are both harvested and cultivated. Everything is worked in a small workshop on site that gives rise to a small production of the highest excellence. The Azienda Agricola i Rodi, is one of the very few excellences that boasts the brand of the Chamber of Commerce of Modena for products based on Wild Blueberry of the Modena Apennines, which ensures us the certified origin, its unique characteristics and peculiarities.
Characteristics
This Raspberry Extra Jam is characterized by a bright ruby red color, with a dense consistency but not too much, characterized by intense aromas of undergrowth. A sweet scent with slightly sour finish that distinguishes all the compotes and jams of the Azienda Agricola i Rodi. This jam goes perfectly with any palate, even those that do not usually like sweet.

Pairings
Perfect for filling cakes, tarts and sweet tortelli to fry. Excellent on its own, to spread on rusks with butter and bread. Reaches the maximum degree of taste with mature and semi-aged cheeses such as Parmigiano Reggiano PDO 36 and 40 months or Formaggio di Fossa PDO.
