Brisighella PDO extra virgin olive oil is obtained from the fruits of the species Olea europaea L., Nostrana di Brisighella variety. This variety must be present in the olive groves at least 90% and the remaining 10% are indigenous olives of the territory.
The production and processing area of Brisighella PDO extra virgin olive oil covers all or part of the territory of some municipalities in the provinces of Ravenna and Forlì-Cesena, Emilia-Romagna region.
The olives must be harvested directly from the tree, either manually or mechanically, from the time the olives turn colour. The olives must be washed at a temperature not exceeding 27 °C; any other treatment is forbidden. Oil extraction operations must take place within four days of harvesting. All oil extraction and packaging operations must take place in the specified production area.
Brisighella PDO extra virgin olive oil boasts ancient origins, confirmed also by the recent discovery of a small family mill dating back to Roman times. Written evidence of olive oil production in the production area can be found starting from documents and notarial acts of the 15th-16th centuries, up to texts of the last century. The transition from production destined mainly for self-consumption to marketing, on the other hand, is recent history, beginning with the founding of the Cooperativa Agricola Brisighellese oil mill in 1970.
Characteristics
Brisighella PDO extra virgin olive oil is emerald green in colour with golden hues. The aroma is medium to strong fruity with a distinct hint of herbs and/or vegetables. The flavour is fruity, with a slight hint of bitterness and a light to medium hint of pungency.
Pairings
Brisighella PDO extra virgin olive oil is ideal for seasoning baked and grilled white meat dishes such as chicken and guinea fowl, but it also goes perfectly with tasty white fish dishes, shellfish, tuna and salmon. It is also excellent as a raw condiment on vegetables and to flavour sauces.
