Flower of Salt and Wild Fennel

For once we made an exception! Even though we only deal in products from Emilia-Romagna, we could not fail to include this highly prized Flower of Salt in our catalogue of excellence.

There is a huge difference between the classic salt we use every day to flavour our dishes and this Flower of Salt, which does not simply act as a flavour enhancer, but enhances the distinctive taste of each dish in which it is added. This is precisely why it is used by the world's greatest chefs, who have dispensed with simple table salt for this delicacy.

It comes in large, crumbly crystals that are harvested by hand.

It is harvested only in summer and under favourable climatic conditions; after harvesting, chopped and skilfully amalgamated wild fennel seeds are added to these fine Flower of Salt crystals.
