"Senatore Cappelli" organic durum wheat Spaghetti

Senatore Cappelli is a species of durum wheat obtained by geneticist Nazareno Strampelli, who at the beginning of the 20th century set up a series of experiments to obtain the best wheat of all. An interesting anecdote is that this variety of wheat was dedicated to the Abruzzese marquis Raffaele Cappelli, Senator of the Kingdom of Italy, who in the last years of the 19th century had initiated agricultural transformations in Apulia and supported the geneticist Strampelli in his research activities. Today, Senatore Cappelli wheat is widely used, especially still in the south of Italy (Basilicata, Calabria, Puglia, Sardinia) and has become the symbol of the chefs' pasta, given its very high qualities, its perfect cooking properties, consistency and ability to hold sauces. Today, Senatore Cappelli is used not only for pasta, but also for the production of bread, pizza and high-quality, almost exclusively organic products.

Pasta made from Senatore Cappelli wheat is already tasty and fragrant in its own right, so in order not to overpower its aromas, we recommend using simple sauces, tomato for example or vegetable-based. It is also excellent with fish, such as spaghetti with clams or courgettes and prawns. Let yourself be overwhelmed by the unmistakable taste of this gourmet pasta.
