After the harvest, the Lambrusco grapes are immediately taken to the winemaking facility, where they are destemmed, selecting only the best grapes. Following the pressing phase, the must ferments in autoclaves, following the production principles of the Martinotti Method.

Characteristics

Ruby red in colour, with a light, persistent rim and an intense, deep bouquet. The pleasantness of red fruits such as cherry, sour cherry and raspberry is well integrated with the spicy notes and floral hints of violets that give freshness to an immediate and long nose. The taste is instead fruity and complex. The good tannic texture, pleasant savouriness and good freshness give the fruity, spicy and floral sensations an interesting impetus. The finish is long, persistent and intriguing.

Pairings

Its limited residual sugar, good alcohol content, and correct ratio of tannin, freshness, and flavour make it an excellent wine for pairing with cured meats, medium-aged cheeses, and red meats. It enhances its qualities by accompanying dishes of medium structure, fatness and flavour, such as boiled meats, roasted meats and traditional Emilian first courses, such as tortellini. It surprises when paired with fish of good fatness and sweet tendency, such as salt cod.
