Aged Guanciale is one of the great protagonists of the Italian pork butcher's tradition. Made from select Italian pork cheeks, it is artisanally hand-salted and slowly cured, enhancing its aroma, tenderness, and intense flavor. Its distinctive shield shape, the ground pepper on the surface, and the perfect balance of lean and fat make it ideal both sliced and used in classic Italian recipes, such as carbonara, amatriciana, and gricia.

Guanciale is prepared using carefully selected Italian pork. After the traditional hand-salting process, known as "sal bianco," the product undergoes a resting phase during which it slowly absorbs aromas and flavors. It is then coated with ground pepper and left to cure for at least 80 days, achieving a firm yet soft consistency and an intense, delicately spiced flavor.

Characteristics

Aged Guanciale is distinguished by its distinctive shield shape and rustic appearance, coated with ground pepper that enhances its aroma. When cut, it is pearly white, streaked with delicate reddish-pink streaks. The fat is soft and melting, while the flavor is full-bodied, aromatic, and slightly spicy. The long aging process lends balance and intensity, making it a rich yet elegant product.

Pairings

In the kitchen, it's the ideal ingredient for preparing traditional Italian classics like carbonara, amatriciana, and gricia, where its fat slowly melts, lending creaminess and flavor. Sliced thinly, it's excellent on warm bread, crostini, or freshly baked focaccia. It pairs beautifully with flavorful cheeses, aged pecorino cheeses, grilled vegetables, and pickled vegetables. Perfect with young, lively red wines like Lambrusco, Sangiovese, or Montepulciano.
