It's a unique cheese, yet easy to enjoy: delicate, fragrant, and enveloping, perfect for adding a gourmet touch to a selection of cheeses.
Characteristics
Firm and flavorful, with a full-bodied flavor of sheep's milk and a sweet note from wildflower honey. The flavor is balanced: the sweetness doesn't overwhelm the cheese, but rather makes it softer and more harmonious. The rind is treated and inedible.

Pairings
Excellent with rustic bread, walnuts, almonds, dried fruit, and delicate jams. It also pairs well with honey, fig or pear compote, and mildly spiced cured meats. As for wine, I think it pairs well with a soft, aromatic white, a dry sparkling wine, or, for a more indulgent pairing, a light passito.
