It's an original cheese, perfect for sophisticated platters, gourmet aperitifs, and tastings where you want to offer something different from the classic pecorino.
Characteristics
It has a compact texture, a full, enveloping flavor, with the typical saltiness of sheep's milk and a delicate fruity nuance. The addition of pear softens the flavor profile and makes it slightly sweet, without overpowering the cheese's character. The rind is treated on the surface and is not edible.

Pairings
It pairs beautifully with delicate honey, pear jam, fig compote, dried fruit, and rustic bread.
