Caciocavallo Irpino

A true masterpiece from the Alta Irpinia region of Campania, this authentic Caciocavallo Irpino is aged for a minimum of 60 days. Crafted from premium cow's milk using the traditional 'pasta filata' (spun paste) method, it features a smooth, semi-hard texture and a sweet, delicate flavor that becomes slightly spicy and deeply savory as it ages. It is a fundamental pillar of Southern Italian dairy tradition.

Caciocavallo Irpino is phenomenal both fresh and melted. Serve it sliced thick on rustic bread with sweet fruit preserves, or melt it over roasted potatoes and grilled vegetables. For a true Southern Italian experience, pair it with a full-bodied, volcanic red wine like Aglianico del Vulture or Taurasi.
