Fontina Dop

A prestigious, limited availability DOP cheese crafted high in the Italian Alps of the Valle D'Aosta using raw, unpasteurized cow's milk. Aged for a minimum of 2 months, it develops a smooth, semi-soft paste with a rich, complex, and deeply nutty flavor profile with hints of wild alpine herbs. It is widely considered one of the finest melting cheeses in the world.

Fontina DOP is the absolute undisputed king of the traditional Italian Fonduta (Fondue). It is phenomenal melted over roasted meats, potatoes, or folded into rich baked pasta dishes. Pair this alpine masterpiece with a structured, elegant red wine from the region, or a rich, buttery Chardonnay.
