Bitto Dop

An incredibly rare, limited production DOP cheese from the Lombardy Alps, crafted primarily from raw cow's milk with a traditional addition of goat's milk. This spectacular hard cheese is aged for a minimum of 12 months, developing a deeply rich, strong, and highly complex flavor profile that finishes with a signature tangy, almost spicy aftertaste.

Due to its rarity and intensity, Bitto DOP should be savored in small, meditative pieces at the end of a grand meal, accompanied by high-quality artisanal honey and roasted walnuts. It is also the traditional cheese used in the famous Pizzoccheri pasta dish. Pair it with a powerful, aged red wine like a Valtellina Superiore or an Amarone.
