Tuna Bottarga

Bottarga is the 'Caviar of the Mediterranean'. It is the salted, pressed, and naturally sun-dried roe pouch of Mullet (Muggine) or Tuna. It offers an incredibly complex, briny, and savory flavor profile.

Grate or shave thinly over warm spaghetti with garlic, olive oil, and a touch of lemon zest for the ultimate Sardinian pasta dish. Do not cook the bottarga, only use it as a finishing garnish.
