Characteristics

A surprising combination of the intense creaminess of Blue Cheese and the aromatic elegance of Moscato Passito, enriched by the citrus notes of candied orange peel. During the maturation process, the cheese absorbs the sweet and fruity nuances of the passito, while the rind, embellished with orange pieces, enhances the freshness and intensity of its aroma. The texture is soft and velvety, with a perfect balance between the typical flavor of the blue cheese and the enveloping sweetness of the honeyed and citrus notes.

Pairings

Perfect with orange blossom honey, bitter orange jam or figs, which enhance its fruity component. It pairs splendidly with a Moscato di Pantelleria, a Vin Santo or a Recioto di Soave, wines that enhance the taste profile of the cheese with their aroma. Excellent to taste with toasted almonds, pecan nuts and multi-grain bread, it is also ideal for enhancing refined dishes such as a citrus and passito risotto, where the creaminess of the cheese blends with the fruity notes of the wine. Also try with a pork fillet with passito reduction and caramelized oranges, in which the intense flavor of the cheese balances the sweetness of the sauce. Finally, perfect on gourmet crostini with foie gras and orange honey, for an elegant and sophisticated tasting experience.

The product arrives vacuum-packed and should be stored in the refrigerator at 2-8°C. Once opened, it should be consumed within 7-10 days, storing it in the refrigerator at a temperature between 0°C and 4°C. To maintain its quality, it is advisable to wrap it in food paper or store it in an airtight container, avoiding contact with other cheeses so as not to alter its flavor.
