Blue Cheese Passito and Red Fruits "Red Gold"

Characteristics

 A refined cheese with a strong character, born from the encounter between the creaminess of Blue Cheese and the intensity of passito wine and red fruits. During the maturation, the cheese absorbs the sweet and aromatic notes of the passito, while the rind is enriched with blueberries and currants, giving it an intense color and an enveloping fruity aroma. The paste is soft and velvety, with a perfect balance between the typical flavor of the blue cheese and the enveloping sweetness of the fruit.

 Pairings

 Ideal to be enjoyed with chestnut honey or berry jam, which enhance its sweet and spicy nuances. It pairs perfectly with a Passito di Pantelleria, a Recioto della Valpolicella or a Tawny Port, wines capable of enhancing its intensity and aromatic persistence. Excellent with walnuts, almonds and whole grain bread, it also finds space in gourmet dishes, such as a risotto with red wine and berries or a meat tartare with a passito reduction.

Cow's milk, salt, rennet, lactic ferments, selected molds. Refined with Raboso Passito (Corinth grapes) and dehydrated cranberries (60% cranberries, sugar, sunflower seed oil). External decoration: dehydrated cranberries.

The product arrives vacuum-packed and should be stored in the refrigerator at 2-8°C. Once opened, it should be consumed within 7-10 days, storing it in the refrigerator at a temperature between 0°C and 4°C. To maintain its quality, it is advisable to wrap it in food paper or store it in an airtight container, avoiding contact with other cheeses so as not to alter its flavor.
